Featured Jam of the Week! BAM Jam'n BBQ and Whiskey Beef Roast

Don't start your week off with the Monday blues! Pump up the Jam by getting your week going with this fantastically flavored BAM Jam'n BBQ and Whiskey Beef roast that will keep you singing it's tune for days after! This recipe features both BAM (Bourbon and Maple) Bacon Jam Chutney and BAM (Bourbon and Molasses) BBQ Simmering Sauce. Spread the Jam, Share a Tale, and Spark Some Love!
1 8oz Jar BAM BBQ Simmering Sauce
2 4oz Jars BAM Bacon Jam Chutney
3lbs Beef Roast (I used Chuck)
½ Cup Brown Sugar
1 Tbsp Flour
1 Tbsp Paprika
1 Tbsp Garlic Powder
1/2 Tsp Parsley Flakes
1/2 Tsp Cumin
1/4 Cup Olive Oil
2 Tbsp Unsalted Butter
1/2 Cup Bourbon/Whiskey
4 Garlic cloves
5-6 Fresh Springs Combo- Rosemary, Sage, and Thyme
Prepare your rub -
Brown Sugar, Flour, Paprika, Garlic Powder, Parsley Flakes, and Cumin
Blend and sift the dry ingredients (listed in previous slide) and you've got gold in your hands.
Message it like you love it! That love will flow into the seasonings and meat, which melt under your touch. Be sue to flip and get in the grooves!
Let the meat bask in that love for at least 20 minutes. If you have more time "let it go, let it go" up to the next day.
Add Olive Oil and Butter to your pan. Let it melt to a sizzle.
Once your pan is good and hot, place your meat in the pan (gently to avoid any oil splash).. I use tongs to help get that good grip you need on heavy meats.
Let it sit and sizzle for about 5-7 minutes.
Get your sizzle and sear on!
Make it as dark and as crusty as you like.
For a good safe sear, be sure to use the amount of oil appropriate to the size pan you're using. I like to use a combination of oils like butter and olive oil for meats.
Use tongs or sturdy utensils for flipping and reducing splatter
Adding a little flour to your rub or directly to the meat can add a deeper crust.
A good hot pan.
Patience to let the smoke fly in the air.
After searing, Turn down burner, remove, and place meat aside on a plate.
Deglaze .pan with Whiskey (I used Jim Beam) and scrape up those crusty bits of goodness into the mixture. Add Garlic Cloves and continue to stir until well mixed (5 min).
Return meat to the pan. Add the fresh herb sprigs.
Here is where you add the magic!
Pour your cans of both BAM BBQ Simmering Sauce and BAM Bacon Jam Chutney directly on top of the meat.
Completely cover meat with sauce and chutney. Spreading and mixing as you go. Remember to get in those pockets.
Spoon juices from the sides of the pan and herbs over the meat and sauces.
Once well covered, smell the goodness going into your oven. Set your timer and prop up your feet for 3 hours with a temperature of 325 degrees. Some ovens and times may vary..
I like to check on my roast every 30 minutes and base and coat each time.
If your basting juice gets low, you can add more whiskey or even more BBQ. It's up to you! Do what you like, how you like!
This once basic piece of meat is like the Ugly Duckling who transformed into a Swan. The melody of the flavors will sing through your kitchen
As time goes on, the sauce will thicken and the meat will begin to melt.
As you come to an end of the cooking time. You can let it go a bit longer than 3 hours also if you want a little bit more flimsy meat but I like mine with a bit of girth.
Be sure to remove the herb sprigs before you begin to pull apart the meat.
Reap the rewards and pat yourself on the back as you've done it! It's time to pull apart your meat!
